Paprika/Garlic Butter Skirt Steak

  • 3 tablespoons unsalted butter
  • 3 garlic cloves, finely chopped
  • 3/4 teaspoons smoked hot paprika
  • 1 tablespoons fresh lemon juice
  • Salt
  • 1 pounds skirt steaks
  • Vegetable oil, for rubbing
  • Freshly ground pepper

Step 1

1.Preheat the grill. In a small saucepan, melt the butter. Add the garlic and cook over low heat for about 2 minutes (golden), stir often. Add the paprika and simmer for about 30 seconds. Remove from the heat, stir in the lemon juice and season with salt. Cover and set aside.

2.Rub the skirt steak with oil and season with salt and pepper. Grill over high heat until nicely charred and medium-rare, about 3 minutes per side. Transfer the steaks to a cutting board and let rest for 5 minutes. Thinly slice the steaks across the grain and put them on skewers. Lightly coat the steak skewers with some of the Paprika butter and grill for additional 20 seconds per side. Spoon the remaining paprika butter over the steak and serve or use as a dip.
