Ingredients

  • Glaze:
  • 18 1/2 Oz Package Yellow Cake Mix
  • 3 1/2 Oz Package Instant Lemon Pudding
  • 4 Eggs
  • 3/4 C Vegetable Oil
  • 4 C Powdered Sugar
  • 1/3 C FRESH Lemon Juice
  • 1 Lemon Zested
  • 3 Tbl Vegetable Oil
  • 3 Tbl Water

Step 1

Preheat Oven to 350 Degrees.

Spray mini muffin pan with nonstick spray or line with mini muffin cups.

Combine cake mix, pudding mix, eggs and oil with electric mixer, 2 mins. Pour into muffin pan, filling each cup about halfway. Bake 12 minutes.

Glaze:
Sift sugar into bowl. Add in remaining ingredients and mix until smooth. Drizzle over warm muffins and let stand one hour. Glaze will harden.
