Cheesy Chicken Quesadillas

Ingredients

  • 1 C. chopped cooked chicken
  • 1/4 C. fat-free ranch dressing
  • 2 t. chili powder
  • 1/2 t. grated lime peel
  • 4 (8 to 10") flour tortillas
  • 1/2 C. shredded Mexican cheese blend
  • 2 medium green onions, sliced thinly
  • 2 T. olive or veg. oil
  • Sour cream, if desired

Preparation

Step 1

Heat 12" skillet over medium-high heat. Place quesadilla, oil side down, in skillet. Brush top with oil.
Cook 2 to 3 mins, turning once, until both sides are golden brown and cheese is melted.
Repeat with remaining quesadilla.

Or: Heat grill. In med. bowl, mix chicken, dressing, chili powder and lime peel. Spread chicken mixture over half of each tortilla; sprinkle wtih cheese and onions. Fold tortilla over and press down. Brush top of each with oil.

Place quesadillas, oil sides down, on grill over medium low heat. Brush tops with remaining oil.
cover grill; cook 4 to 6 mins, turning once, until both sides are golden brown and cheese is melted.
