Peanut Butter and Jelly Cookies
- 1 C flour
- 1 t baking soda
- 1/8 t salt
- 1/2 C brown sugar
- 1/4 C sugar
- 1 C smooth peanut butter
- 1/2 C (1 stick) butter, softened
- 1 large eggg
- 1/2 t vanilla extract
- cherry preserves or cherries glace

Sift together flour, soda, and salt; set aside.
Combine sugars in large mixer bowl. Add peanut butter and butter, beat until smooth and creamy. Add egg and vanilla, mix well. Gradually beat in dry mixture just until blended. Refrigerate, covered for 1 hour.
Preheat oven 375 deg. Shape dough into 1" balls. Place on UNbuttered cookie sheets 1 1/2" apart. Use handle of wooden spoon to make depressions in each ball. Bake 10-12 minutes untily lightly browned and set. Cool on cookie sheets until firm, then transfer to wire racks to cool completely. Fill centers with cherry preseres.
