Ingredients
- 6 boneless skinless chicken breasts
- 1 cup (250 mL) apricot jam
- 1/3 cup (75 mL) finely chopped onion
- 2 tbsp (25 mL) Dijon mustard
- 1 tbsp (15 mL) curry powder
- 1/2 tsp (2 mL) green pepper sauce
- 3 cloves garlic, finely chopped

Preparation
Step 1
Place chicken in a single layer in a greased shallow 3 quart (3 L) baking dish. Do not overcrowd pan. Combine remaining ingredients (apricot jam through garlic) in a small saucepan. Bring to a boil over medium heat. Reduce heat and simmer, stirring frequently, for 2 minutes. Pour over chicken. Bake, uncovered, at 350ºF (180ºC), basting once, for 55 - 60 minutes or until chicken is cooked through. Serves 6.
