Ingredients

  • 1 (3oz) pkg lemon jello
  • 1 1/4 c. boiling water
  • 1/2 c. lemon juice
  • 1/3 c. sugar
  • vanilla wafers
  • 1 (13 oz) can evaporated skim milk (well chilled)

Preparation

Step 1

Dissolve jello in boiling water.

Add sugar and lemon juice to dissolve.

Chill until slightly set.

Crush into enough vanilla wafers crumbs to line bottom of 9x13 pan.

Whip slightly set jello till foamy.

In a seperate bowl, whip the chilled evaporated skim milk till it looks like whipped cream.

Combine this with foamy jello well. Pour mixture on top of crust and sprinkle top with more crushed vanilla wafers.

Chill.

Ready to serve in an hour or so.
