Spaghetti Squash Fritters

Ingredients
- 1 medium to large Spaghetti Squash
- 1 cup seasoned panko breadcrumbs
- 1 cup grated Parmesan cheese
- 2 eggs, beaten
- Salt and Pepper to taste
- Olive oil to sauté

Step 1
Preheat oven to 450 degrees.
Poke holes in spaghetti squash and bake for approximately 1 hour in a baking dish with about 1" of water.
Be very careful! Take spaghetti squash out of oven and cut in half lengthwise. Scoop out the seeds and discard (I use a spaghetti getter to do this!). Then scoop out the spaghetti squash and place in large bowl. Use paper towels or a clean dish towel and squeeze as much of the water out go the squash as possible.
Beat the eggs and add to the squash with the breadcrumbs, cheese, salt and pepper.
Heat the oil in a frying pain or on a skillet and sauté for about 5 mins on each side.
