Ingredients
- 1/2 C walnuts
- 3 C whole wheat flour
- 2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1 1/2 tsp cinnamon, ground
- 1/2 tsp nutmeg, ground
- 1 medium zucchini, quartered
- 1 1/2 C pineapple
- 3 lg eggs
- 2 Tbsp molasses
- 1/2 C honey
- 1 apple, cored and quartered
- 2 tsp vanilla extract
Preparation
Step 1
Preheat oven to 350ºF.
Add walnuts, flour, baking soda and powder, salt, cinnamon and nutmeg to WildSide Jar and secure lid. Press "Speed Up” to Speed 1 and allow full cycle to run.
Dump dry ingredients into mixing bowl. Add zucchini, fill Jar with water to 3 cup line and secure lid. Press “Pulse” 8-12 times or until zucchini is grated. Empty Jar into fine mesh sieve to drain water. Add zucchini to mixing bowl. Add pineapple to Jar and secure lid.
Press “Pulse” 4-6 times or until pineapple is crushed. Add pineapple to mixing bowl. Add eggs, molasses, honey, apple and vanilla to Jar and secure lid.
Select “Batters”. Pour batter into mixing bowl. Using a spatula, incorporate all ingredients and pour into 2 - 8”x4” greased loaf pans.
Bake for 50-60 minutes or wooden toothpick inserted in center comes out clean.
