- 1 lb Jimmy Dean Sausage
- 5 Tbsp. butter
- 5 Tbsp. flour
- 1/4 c. chopped fresh parsley or 1 TBSp dried
- 2 cloves garlic,minced
- 1 tsp salt
- 1/4 tsp. pepper
- 3 1/2 c. milk,scalded
- 1 pkg. (10 oz) frozen chopped spinach,thawed
- 1 1/2 c. small curd cottage cheese
- 1/2 c. grated Parmesan cheese
- 1 tsp. crused basil
- 2 eggs,slightly beaten
- 1/3 c. heavy cream
- 6 lasagna noodles,cooked and set aside
- 2 c. shredded mozzarella cheese
- 1/2 c. fine bread crumbs
- 1 Tbsp melted butter
- 1/4 c. chopped fresh parsley

Step 1
Preheat oven to 350* F.Crumble sausage into a large skillet and cook until browned;drain thoroughly.In saucepan melt 5 tablespoons butter and blend in flour.Add parsley,garlic,salt,papper and milk.Continue cooking,until thickened,stirring constantly.Set aside.Place spinach in towel and squeeze to remove excess moisture.Combine spinach,cottage cheese,Parmesan cheese,basil,eggs and cream,stir to blend.Pour 1/3 sauce in bottom of 9" x 12" baking dish,then place 3 lasagna noodles,following by half of spinach mixture and half of sausage,then 1 cup Mozzarella.Repeat layering ending with sausage.Top with mixture of bread crumbs,2 tablespoons melted butter and parsley.Bake covered for 40 to 45 minutes.Remove cover for last 10 minutes to brown lightly on top.
