Peanut Butter Chocolate Chip Muffins

Ingredients

  • 1 1/2 cups flour
  • 1/3 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 cup chunky peanut butter
  • 2 TBS margarine
  • 2 eggs, beaten
  • 3/4 cup lowfat milk
  • 1/2 cup semi-sweet chocolate chips

Preparation

Step 1

1) Preheat oven to 400 degrees F. Set muffin papers in muffin tims or spray tins with cooking spray.

2) Combine flour, sugar and baking powder. Cut peanut butter and margarine into dry mixture until coarse crumbs appear.

3) In small bowl combine eggs and milk. Add to flour mixture and stir until mixture is lumpy. Fold in chocolate chips.

4) Drop batter into tins to 2/3 full. Bake 12 - 15 mins until light brown. Cool.
