Banana Pudding

Ingredients

  • 1 cup sugar
  • 1/2 cup flour
  • 1/2 tsp. Salt
  • 2 cups milk
  • 1 tsp. Vanilla
  • 1 tbsp. Butter
  • 4 egg yolks
  • Vanilla wafer (see my recipe for homemade if you want or you can use Nilla Wafers)
  • 4-5 ripe bananas
  • "meringue
  • 4 egg whites
  • 5 tbsp. Sugar
  • 1/4 cream of tartar
  • 1/2 tsp. Vanilla"

Preparation

Step 1

In med. Bowl combine sugar, salt, and flour. Set aside. In separate bowl combine milk and vanilla. Set aside. In saucepan, whisk egg yolks together. Turn heat onto med. Over medium heat add small amounts of flour mixture, alternating to milk mixture. Continue alternating between flour and milk mixture until both are gone. Stir constantly. Bring to a gentle boil. When pudding starts to thicken add butter, continue stirring until mixture reaches pudding consistency. Remove from heat. In 9x9 pan layer wafers, sliced bananas and pudding, repeat layers.

For Meringue:
Beat egg whites at high speed until soft peaks form. Add cream of tartar. Gradually add sugar, beat until stiff peaks form. Fold vanilla into meringue. Spread meringue over pudding, covering completely. Bake at 375 for 12-15 minutes or until peaksnon meringue start to brown.

For added extra fun I put semi sweet chocolate chips in between the two layers of the pudding. Almost like a chocolate covered banana!
