Coconut Raspberry Bars

Ingredients

  • 3/4 c. butter, softened
  • 1 c. sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2 c. flour
  • 1/4 tsp baking powder
  • 2 cups flaked coconut, divided
  • 1/2 c. chopped walnuts
  • 1 jar raspberry preserves
  • 1 c. white baking chips

Preparation

Step 1

Cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine flour & baking powder, gradually add to creamed mixture and mix well. Stir in 1 1/4 c. coconut and walnuts.

Press 3/4 dough into greased 13 x 9 pan. Spread with raspberry jam. Sprinkle with chips and remaining coconut. Crumble remaining dough over the top, press lightly.

Bake at 350 for 30-35 minutes or until golden brown.
