Quinoa with Steamed Vegetables

Quinoa with Steamed Vegetables 0 Picture


  • 1 cup quinoa
  • 2 cups water
  • 4 medium carrots
  • 1 zucchini
  • 8 spears of asparagus
  • 1 Tbsp rice wine vinegar
  • 2 Tbsp olive oil
  • 1 tsp thyme
  • black pepper to taste

Step 1

Place water in a small covered saucepan and bring to a boil. Add quinoa and stir. Reduce heat to a simmer and replace lid. Simmer for 11 to 12 minutes, or until water is absorbed.

Meanwhile using a "Y" shaped peeler, peel the carrots and zucchini into strips. Snap the woody ends off the asparagus and cut the spears into 2-inch sections. Steam the vegetables for 3 to 4 minutes.

In a small bowl, whisk together the vinegar, thyme and olive oil. Once the quinoa is cooked, fluff it with a fork. Place 1/2 cup of quinoa on each plate and top with a quarter of the vegetables on top of each serving. Top with about 2 teaspoons of the vinaigrette on each serving.
