Ingredients
- 2 cups confectioners' sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 tsp grated lime zest
- 1 tbsp fresh lime juice
- 1 tsp vanilla extract
- 3 1/4 cups shredded sweetened coconut
- 2 cups unsifted all purpose flour
- Food coloring, optional
Preparation
Step 1
Preheat oven to 325 F. In bowl, beat sugar and butter until fluffy; add egg, zest, lime juice and vanilla. Add 3/4 cup coconut and the flour. Tint remaining coconut with food color. Shape balls using 1 teaspoon dough each; roll in coconut to coat. Place on greased baking sheets; flatten slightly. Bake 18 minutes, until golden.
