Ingredients
- 2/3 cup sliced shallot
- 2 cups broccoli florets
- 2 tablespoons EVOO
- 8 eggs, beaten
- 1 1/3 cups grated parmesan
- 8 basil leaves

Step 1
In ovenproof skillet, cook shallot and broccolini in EVOO, 5 minutes. Add eggs; cook until set. Add cheese; broil 5 minutes. Top with basil
