Ingredients

  • 1 cup uncooked shrimp, peeled, deveined
  • half a can diced tomatoes (from 19 oz can)
  • half a tub softened cream cheese spread
  • linguine (enough for 2 servings)
  • a large handful fresh spinach leaves

Preparation

Step 1

Heat the shrimp, tomatoes and cream cheese spread in a skillet over medium-high heat, stir. Cook for 3 to 4 minutes or until sauce is blended and shrimp are cooked through. Cook linguine according to package directions, drain and transfer to a large bowl. Toss spinach leaves into cooked linguine. Pour shrimp mixture over, and toss to coat.
