# Tomatoes, cored, seeded and rough chop (Heirloom tomatoes are excellent)

T Parsley and Basil
Sweat onions, then add prok and garlic. Cook until meat is dones, add tomatoes and season with S & P. Cover and cook for about 20min. Before serving, add basil and parsley. Serve over udon or other thick noodles and top with more basil if desired and parm.
