Cheesecake Cookies

Serves 16. Excellent Christmas Cookie!

Ingredients

• 5 Tbsp. Butter, softened
• 1/3 Brown Sugar, packed
• 1 Cup Flour
• 1/2 Cup Sugar
• 1 ( 8 oz.) Pig. cream Cheese, softened
• 1 Egg
• 2 Tbsp. milk
• 1 Tbsp. Lemon Juice
• 1/2 Tsp. Vanilla

Preparation

Step 1

1. Heat oven to 350

2. In medium bowl blend butter, brown sugar, and flour with a fork until mixture looks like coarse crumbs. Put on cup of mixture aside for topping.

3. Press remaining mixture into 8x8x2 inch baking dish-bake for 15 minutes

4. In another bowl combine sugar and cream cheese mixing until smooth

5. Thoroughly beat in egg, milk, lemon juice and vanilla

6. Spread over baked crust and sprinkle with remaining brown sugar mixture

7. Bake for 25 minutes

8. Let cool then chill for one hour

9. Cut into 16 squares
