Cowboy Caviar

Ingredients

  • Dressing:
  • 1 can black eye peas, drained
  • 1 can black beans, drained
  • 3/4 cup frozen corn, thawed
  • 3 green onions
  • 1/2 cup chopped bell pepper
  • 2-3 tomatoes, diced
  • 10 jarred jalapeno slices, diced
  • 1/3 cup cilantro, chopped
  • 1 ripe avocado
  • 1 tbsp. olive oil
  • 1 tbsp. white vinegar
  • 1/2 lime, juiced
  • 1/2 tsp. Dijon mustard
  • Salt - pepper

Preparation

Step 1

Combine all vegetables, except avocado. Mix dressing and pour over vegetables. Refrigerate. Just before serving, add avocado. Serve with tortilla chips.
