Huckleberry Cheesecake with Huckleberry Topping

Ingredients

  • Huckleberry Cheesecake:
  • 8 ounces cream cheese
  • 1 can sweetened condensed milk
  • 1/4 cup lemon juice
  • 1/2 tsp vanilla
  • 1 pre-made graham cracker pie crust
  • Huckleberry Topping:
  • 1 1/2 cups huckleberries
  • 1 cup sugar
  • 1 tsp lemon juice
  • 3 tbsp cornstarch mixed with a little water

Preparation

Step 1

Cheesecake: Mix together all ingredients and pour into graham cracker crust. Cool and pour huckleberry topping over it just before serving.

Huckleberry Topping: Cook all ingredients until thick. While huckleberries are still warm, pour over chilled cheesecake and serve.
