    c. frozen corn

  • 2

    tbs butter

  • 1 1/4

    c. cornmeal

  • 3/4

    c. whole wheat flour

  • 3

    tbs sugar

  • 2 1/2

    tsp baking powder

  • 1

    tsp salt

  • 2

    eggs

  • 1

    c. milk

  • 1/2

    c. sour cream

Directions

Heat the butter in skillet over medium-low. Add corn and sauté 3 to 4 minutes. Preheat oven to 400 degrees. Grease 9x9 x2 baking dish. Mix together cornmeal, flour, baking powder and salt, set aside. Whisk together eggs, milk and sour cream in large bowl until well blended. Whisk in corn. Add cornmeal mixture stirring just until dry ingredients are moistened. Do not overmix. Pour into prepared pan. Bake 20 to25 minutes or until golden brown. Cool slightly in pan on wire rack cut into squares and serve.
