Asparaus with Balsamic Tomatoes

  • 1 # Asparagus
  • OO
  • 1 1/2 c Grape or Cherry Tomatoes
  • 3 Cloves Garlic
  • 2 oz Goat Cheese
  • S & P
  • Balsamic Vinegar

Preparation

Step 1

Blanch and shock asparagus. Heat OO in saute pan and add garlic. Saute until fragrant and add tomatoes. Saute until tomatoes are hot and starting to breakdown.
Arrange asparagus on platter and top with hot tomato mix. Crumble goat cheese on top and drizzle balsamic vinegar.
