Dutch oven baked bread

Ingredients

  • 6 cups all-purpose flour
  • 1/2 tsp. instant rise dry yeast. quick rise/ rapid rise etc.
  • 3 tsp table salt
  • Mix dry ingredients in clean mixing bowl.
  • When the dry ingredients are well mixed add 1/2 cup beer (lager)
  • 1 tsp white vinegar.
  • Stir well.

Preparation

Step 1

Cover mixing bowl well with plastic wrap and leave in kitchen at room temperature to rest for 18 hr.
Dump into 450°F oiled D.O. (help with rubber spatula.) BE CAREFUL AROUND THE HOT HOT HOT DUTCH OVEN AND LID!
Even up into fairly round lump.

Return to oven and bake as above.
I found 205°F on Thermapen gave me the right color and no stickiness in center.
Remove to rack to cool for 1-2 hr (yeah sure 2 hr!)
