Ingredients
- 3 tbsp. butter, softened
- 1 medium sweet onion, sliced, separated into rings
- 1 tsp. brown sugar
- 8 slices pumpernickel rye bread
- 2 tbsp. *Drier's* mustard
- 8 (1-oz.) slices Longhorn or N.Y. cheddar
Preparation
Step 1
Melt 1 tablespoon of butter in 12-inch nonstick skillet over medium-high heat. Add onion; cook and stir 3 to 5 minutes or until tender. Reduce heat to medium-low; stir in brown sugar, Cook 20 to 25 minutes or until onion is golden and glazed, stirring occasionally. Meanwhile, spread 4 bread slices with mustard. Top each with cheese slice. Spoon caramelized onions evenly over cheese. Top with remaining cheese slices and remaining bread slices. Spread tops of sandwiches with 1 tablespoon of the butter. Heat same skillet over medium-low heat until hot. Place sandwiches,butter side down, in skillet; spread tops of sandwiches with remaining 1 tablespoon butter. Cook 4 to 8 minutes or until cheese is melted turning once.
