Crawfish soup

Ingredients

  • 1 lb. crawfish tails 3 to 4 green onions
  • 4 cans cream of potato soup 1/4 c. parsley
  • 2 cans cream corn 1 tsp. salt
  • 4 soup cans of milk 1/2 tsp. Tabasco sauce
  • 1 stick of butter 1/2 tsp. red pepper
  • 1 med. onion, chopped 1/2 tsp. white pepper
  • 1 sm. green (bell) pepper, chopped 1/2 tsp. black pepper
  • 1 garlic clove or 1 tsp. minced garlic 1 tsp. liquid crab boil

Step 1

Saute onions, bell pepper, and garlic in butter until tender. Add soup, corn, milk, parsley, crawfish tails and seasonings. Bring soup to a boil. Reduce heat and simmer about 20-30 minutes.

Whole kernel corn can be used instead of cream if you want. That is what I did when I made it, and only used one can. I also used 2 cans milk and 2 cans of half and half. I usually just use Cajun seasoning instead of the red, white, and black pepper.

The crawfish tails will be the most expensive ingredient. I usually buy the Boudreaux’s brand if I can find it. It’s only a twelve ounce pack, but I think it’s enough. It’s usually a little cheaper than some other brands.
