Spanish Ham & Rice One-Pot

Ingredients

  • 2 tbsp. olive oil
  • 1 onion, chopped finely
  • 1 red bell pepper, deseeded and chopped finely
  • 12 oz./350 g piece of drier’s ham, cubed
  • 2 tsp. paprika
  • 14 oz./400 g canned chopped tomatoes
  • 1 c. long grain rice
  • 2 c. hot chicken stock
  • salt and pepper
  • 3/4 c. frozen peas

Preparation

Step 1

Heat the oil in a large heavy pan over medium heat. Add the onion and bell pepper. Cook for 5 minutes, or until soft. Stir in the ham, paprika, tomatoes, and rice. Cook, stirring constantly, for 3-4 minutes. Pour in the hot stock. Season with salt and pepper. Bring to a boil. Cover tightly and simmer over low heat for 15 minutes. Add the peas. Cover and cook for another 5 minutes, or until the rice is tender and has absorbed most of the liquid. Remove the pan from the heat and let the dish stand for 5 minutes before serving.
