Ingredients
- 1 c. dried navy beans, rinsed and drained
- 3 c. water
- 1 1/2 c. hot ham stock, if not available chicken stock will do
- 8 oz. *Drier's* ham, diced
- 1 small yellow onion, thinly sliced
- 1 bay leaf
- 1 tsp. chopped fresh thyme
- salt and pepper
Preparation
Step 1
Combine beans and water; soak 6 to 8 hours (overnight). Drain and place in soup pot. Add the ham stock, ham, onion, bay leaf and thyme. Bring to a boil. Reduce the heat to simmer, cover, and cook about 3 hours, until the beans are soft. Remove the bay leaf. Mash or puree some of the beans and serve. Season with salt and pepper to taste.
