Ingredients
- 1 piecrust
- 4 or 5 medium potatoes, boiled and coarsely mashed
- 1 (12-oz.) can boneless salmon
- 6 or 7 green onions (including green from stalk), sliced into rings
- 6 tbsp. butter
- 1 large lemon
- 1 egg, beaten
Preparation
Step 1
Preheat oven to 375 degrees. Place bottom layer of the piecrust in a pie pan. Mix the mashed potatoes and salmon. Place the onions on the piecrust and the potato mixture on top. Place pats of butter across the top, and squeeze lemon over the pie. Seal with the top crust and brush with an egg wash (the beaten egg). Bake until golden brown, about 1 hour.
