Maple Brine Chicken

Ingredients
- For the Brine:
- Heat
- 4 c water
- 1 cup pure maple syrup
- 1/2 cup kosher salt
- 1/2 cup brown sugar
- 3 dried bay leaves
- 1 tbsp whole black peppercorns
- 1 cinnamon stick
- 8 cup ice cubes
- 6 bones less skinless chicken breast pierced.
- Fresh cracked pepper
Preparation
Step 1
Heat all brine ingredients in a large pot over high, stirring until salt and sugar are completely dissolved. 2 minutes approx. remove from heat and stir in ice. Let cool.
Add Chicken to the brine; cover and chill over night but at least 4 hours. remove chicken from Brine, rinse and pat dry with paper towels. season chicken with cracked pepper and coat grill pan or grill with non stick spray.
Cook chicken 5-6 minutes on each side until thickest part registers 165 degrees
