- 6-7 c., all purpose flour
- 1 1/2 t. salt
- 1 c. water
- 6 eggs
- 1 T. oil
- Melted butter & minced fresh parsley (optional)

Step 1
1. In a large bowl, combine 6 c, flour and salt. Make a well in the center.
2. Beat eggs and water; pour into well. Stir together, forming dough. Turn dough onto a floured surface and knead 8-10 times.
3. Divide dough into 8 portions. On lightly floured surface, roll each portion into a 1/16" thick square. Let stand uncovered or 10 minutes.
4. Roll up, jellyroll style. Using a sharp knife, cut into 1/4" slices. Unroll noodles and dry in a single layer on paper towels for 1 hr. prior to cooking.
