Pan Roasted Garlic Potato

Ingredients
- 4 medium russet potatoes
- 2 TBSP olive oil
- 2 TBSP butter
- 2 cloves garlic peeled

Preparation
Step 1
cut into 1 inch cubes and set aside in bowl with water, cover until ready to cook
when ready drain potatoes and pat dry with paper towel
in large skillet over high heat, heat olive oil with butter until very hot
add garlic cloves and potatoes and season to taste with salt and pepper
stir to coat with oil and butter
cover and reduce heat to low and cook, stirring occasionally until tender 10-15 mins
remove cover and raise heat to high and cook stirring occasionally until potatoes are golden and crisp about 5 mins longer
