Twice Baked Potato Casserole

Ingredients

  • 6 medium unpeeled potatoes, baked
  • 1/4 t salt
  • 1/4 t pepper
  • 1 lb bacon cooked and crumbled
  • 3 c (24oz) sour cream
  • 2 c (8oz) shredded mozzarella cheese
  • 2 c (8oz) shredded cheddar cheese
  • 2 green onions, chopped

Preparation

Step 1

Cut baked potatoes into 1 inch cubes. Place half in a greased 9x13 baking dish. Sprinkle with half the salt, pepper, and bacon. Top with half of the sour cream, and cheeses. Repeat layers. Bake uncovered at 350 for 20 minutes or until cheese is melted. Sprinkle with onions.
