Mediterranean Lentil Salad


Super healthy lite salad- great flavor and perfect as side dish for anything- or have a bowl for lunch

  • 1 cup dry brown lentils
  • 1 cup diced carrots
  • 1 cup diced red onion
  • 2 cloves garlic- into paste
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • 2 tbsp. lemon juice
  • 1/2 cup diced celery
  • 1/4 cup chopped parsley
  • 1 tsp salt
  • 1/4 tsp black ground pepper
  • 1/4 cup olive oil



Step 1

1. In saucepan, place lentils, carrots, onion, garlic, bayleaf and thyme. Add enough water to sauce pan to cover by one inch. Bring to boil, reduce and simmer for 15-20 minutes or until lentils are tender.
2. Drain lentils, remove bay leaf.
3. Add olive oil, lemon juice, celery, parsley, salt, and pepper.
4. Toss to mix and serve at room temperature.
