Ingredients
- 2 (28 ounce) cans diced tomatoes with juice
- 1/2 to 1 cup textured soy protein
- 2 large onions, chopped
- 2 large green peppers, chopped
- 4 to 5 stalks celery, chopped
- 1 can pinto beans with liquid
- 1 can garbanzo beans with liquid
- 1 can kidney beans with liquid
- 1 tbsp whole cumin
- 1 tbsp dried oregano
- 4 to 6 tbsp chili powder
- 2 to 4 dried chipotles
- 1 tbsp cocoa powder
Preparation
Step 1
Throw everything in a large pot. Bring it to a boil. Turn down the heat. Cover and simmer for about an hour until the vegetables are tender. Add salt to taste and sprinkle with your favorite vegan cheese.
