Ingredients
- 1 quart lowfat 1% milk
- 1/3 cup uncooked long grain rice
- 1 large egg
- 1 large egg white
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- Cinnamon
- Sugar
Preparation
Step 1
Combine 1 quart lowfat milk and 1/3 cup uncooked long grain rice in large, heavy saucepan. Bring to boil over medium high heat, reduce heat and simmer, uncovered, stirring frequently, until rice is very tender, 30 to 35 minutes.
Whisk 1 large egg, 1 large egg white and 1/4 cup sugar in bowl. Gradually whisk in 1 cup hot milk mixture. Return to saucepan and cook over low heat, stirring constantly, 1 minute. Remove from heat; stir in 1/2 teaspoon vanilla extract.
Transfer mixture to bowl. Serve warm or cover surface with wax paper and refrigerate until cold. Sprinkle with cinnamon sugar.
