Ingredients
- 3 lb eye round roast, trimmed
- 1 oz package dried porcini mushrooms
- 1 tbsp dried green peppercorns
- 1 tbsp fresh rosmary leaves
- 3 garlic cloves, peeled
- 2 tsp extra virgin olive oil
- 3/4 tsp salt
Preparation
Step 1
Let beef stand at room temp for 1 hour.
Place an oven rack on lower 1/3 of oven.
Preheat to 500. Place a rack in a roasting pan.
Pulse mushrooms, garlic, and peppercoens and rosmary in food processor until ground.
Rub beef with oil, salt.
Press mushroom mixture into beef.
Place on rack in pan.
Reduce oven temp to 350. Roast 1 hour, until thermometer reaches 130.
Transfer to cutting board, tent with foil and let stand for 20 minutes. Carve into 24 slices.
