Pumpkin Pie (made with Equal Sweetener)

Ingredients

  • 1 (16 ounce) can pumpkin
  • 1 (12 ounce) can evaporated skim milk
  • 3 eggs
  • Five one-half teaspoons of Equal for Recipes or 18 packets sweetener or 3/4 cup Equal spoonful
  • 1/4 tsp salt
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • Pastry recipe of your choice

Preparation

Step 1

Roll pastry on floured surface to circle one in larger than inverted pie pan. Ease pastry into pan; trim and edge. Beat pumpkin, milk and eggs in medium bowl; beat in remaining ingredients.

Pour mixture into pastry shell. Bake in preheated 425 F oven 15 minutes. Reduce heat to 350 F and bake until knife inserted near center comes out clean (about 40 minutes). Cool on wire rack.
