Minted Blueberry Jelly

Ingredients

  • 8 cups fresh blueberries, rinsed and drained
  • 1 cup water
  • 6 1/2 cups sugar
  • 3 ounces liquid fruit pectin
  • 6 sprigs fresh mint

Preparation

Step 1

Combine blueberries and water and cook at a boil until berries are tender. Strain through a cheesecloth. Yield should be about 4 cups liquid. Add sugar to juice in a large saucepan. Bring to a boil and stir in fruit pectin. Continue cooking at full rolling boil for 1 minute. Add mint and stir a few times. Remove mint. Remove from heat and skim off foam. Pour jelly into sterilized glasses. Seal with a thin layer of hot paraffin.
