Double Cheddar Scalloped Potatoes

Ingredients

  • 1 pkg. (5 oz.) scalloped potato mix
  • 2 c. boiling water
  • 1 c. (4 oz.) shredded N.Y.cheddar cheese
  • 3/4 c. milk
  • 1/4 c. cooked crumbled *Drier’s* bacon
  • 1 1/2 c. French fried onions, divided
  • garnish: chopped parsley (optional)

Preparation

Step 1

Preheat oven to 400 degrees F. Stir potato mix, sauce mix and boiling water in ungreased 1-quart casserole. Add cheese, milk, bacon and 2/3 cup French fried onions; stir until well blended. Bake, uncovered, 35 minutes or until top is golden and potatoes are tender. Top with remaining onions. Let stand a few minutes for sauce to thicken. Garnish with parsley, if desired.
