Ingredients

  • 6 bacon strips, diced
  • 3 cups potatoes, peeled and cubed
  • 1 can (14-1/2 oz) chicken broth
  • 1 carrot, grated
  • 1/2 cup onion, chopped
  • 1 tbsp parsley
  • 1/2 tsp celery seed
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 tbsp all-purpose flour
  • 3 cups milk
  • 8 oz American cheese, cubed
  • 2 green onions, thinly sliced

Preparation

Step 1

1. In a large sauce pan, cook bacon until crisp and drain.

2. Add potatoes, broth, carrot, onion, parsley, celery seed, salt and pepper.

3. Cover and simmer until potatoes are tender, about 15 minutes.

4. Combine flour and milk until smooth. Add to soup. Bring to a boil.

5. Boil and stir for two minutes.

6. Add cheese. Stir until cheese is melted and the soup is heated through.

7. Garnish with green onions.
