Mini Cheesecakes

Ingredients

  • 1/3 box vanilla wafers crushed (approx. 33 wafers)
  • 2 8oz. packages cream cheese at room temperature
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla

Preparation

Step 1

Crush wafers until fine powder (can do in food processor)
Mix filling ingredients with mixer until smooth.
Place cookie crumbs in bottom of mini-muffin papers, just enough to cover the bottom. Fill 2/3 full with filling. Bake 350° for 15 min. Cool to room temperature. Top with pie filling of choice.
