E-Z Buttermilk Marinated Roasted Chicken Breasts
Chicken dish is very moist. Can be baked or grilled. First made 2/2006.
- 4 skin-on bone-in chicken breast halves
- 1 quart low-fat buttermilk
- Salt and fresh-ground pepper to taste
Cooking time 30mins
Place chicken breasts and buttermilk in 1-gallon zip-top bag. Press out as much air as possible, seal bag and turn to coat chicken. Refrigerate for at least 4 hours or up to 48 hours, turning bag occasionally.
Place oven rack in lower middle position and preheat oven to 400 degrees. Place a wire rack on a jelly-roll pan(I cover pan with foil). Remove chicken breasts from bag and place them on rack, skin side up. Season with the salt and pepper, to taste. Roast for 30 to 45 minutes, or until chicken is cooked through. Let stand 10 minutes and serve
***Can also grill chicken.
