Beef Salpicao (Stir-fried Garlic Beef)

I found this Filipino recipe online one day when I was searching for recipes with beef tenderloin. This recipe is quick and easy to prepare. You can marinade the meat in the morning and cook it right after you get home from work.

Ingredients

  • 1 lb beef tenderloin, cut into 1/2 inch chunks (or other tender cut)
  • 2 tablespoons olive oil or canola oil
  • 6 cloves garlic, minced (more if you like)
  • salt, to taste
  • fresh ground black pepper, to taste
  • 1/4 teaspoon paprika
  • 5 tablespoons oyster sauce
  • 3 tablespoons butter or margarine
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, chopped

Preparation

Step 1

1. Combine oil, garlic, salt, pepper, and paprika in a bowl.

2. Marinate beef chunks in garlic-oil mixture for a couple of hours or more in the fridge.

3. In a medium frying pan, saute onions and peppers till peppers get softer but still have a crunch to them.

4. Add 2 tbsp of oyster sauce and cook for another 2 minutes. Remove from the stove and keep warm.

5. Saute marinated beef (with marinade) in VERY hot oil

6. Keep stirring until beef chunks are browned evenly.

7. DO NOT lower heat.

8. Add 3 tbsp of oyster sauce.

9. Cook a few seconds more; add butter last.

10. Remove from heat , stir the onion/pepper mixture and serve immediately over hot steamed riceor rice noodles.

*Note: Cooking time should be about 10 minutes or less to keep beef tender.
