Ingredients

  • 4 med. Potatoes, scrubbed, diced fine
  • 6 large, fresh eggs
  • 1/4 c cream
  • 3/4 c chopped tomatoes
  • 1 small zucchini, grated
  • 1/4 sweet onion, chopped
  • 1 T minced oregano, thyme, flat-leaf parsley, red pepper flakes, garlic
  • 1 T olive oil + 1T sweet butter
  • Salt and pepper to taste
  • 1 c shredded cheese

Preparation

Step 1

In wide ovenproof skillet, grill potatoes in olive oil and butter til browned.
Add zucchini and onions, then tomatoes, herbs.
Season with salt, pepper.
Whisk eggs together with cream and pour over potatoes.
Sprinkle on the cheese.
Bake 400 for 25 min. or tip top is firm.
Serve in wedges warm, or at room temp.
