Summertime Potato Salad

This is a classic potato salad made with hard-cooked eggs and a mayonnaise and mustard dressing, perfect for a summer meal or cookout. This potato salad is always a hit.

Ingredients

  • 4-5 cups cubed waxy potatoes, cooked, drained, cooled*
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion
  • 3 hard-cooked eggs, chopped
  • 2 tablespoons chopped sweet pickle
  • 2 teaspoons sweet pickle juice
  • 1/2-2/3 cup mayonnaise
  • 1/2-1 teaspoon prepared mustard
  • 1/4-1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper

Preparation

Step 1

Combine all ingredients in a bowl and stir gently to combine. Refrigerate until serving time. Serves 4 to 6.


*For best texture, use new potatoes, red skinned potatoes, or other boiling potatoes.

I am not what you would call a great cook. Not that I can't cook, I never had to do the cooking. My husband loves to cook. I'm beginning to try to do the simple dishes though, so I made the salad just like you said to do it, and my family loved it. I will be trying some more of your recipes soon.
