- 1/4 cup Wesson oil
- 1 frying chicken (2 1/2 to 3 lbs) cleaned and cut into
- seving pieces
- 1 recipe Barbecue sauce(recipe follows)
- Parsley
Preparation
Step 1
Put half the Wesson Oil in a flat,uncovered roasting pan.Place pieces of chicken,skin side up,in pan;do not overlape.Brush top sides with remaining Wesson Oil.Bake in moderate (350*F.) about 1 hour.Spoon hot barbecue sauce over chicen,at 10-minute intervals,for the next 30 minutes,or until chicken id tender.Keep small amount of sauce to poor over chicken just before serving.To serve,garnish with parsley
BARBECUE SAUCE:
1 cup chile
1/4 cup vinegar
1/4 cup water
2 tablespoon sugar
1/2 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon white pepper
1 tablespoon prepared mustard
1 medium onion (1/2 cup finely choppped)
1/4 cup Wesson Oil
Mix ingredients in order given in saucepan.Heat to boiling,reduce heat;simmer gently 10 minutes,stirring frequently.Remove from heat;use for basting chicken,spareribs,etc,or as sauce for seafood or meat.About 1 3/4 cups)
