Healthy Baked Chicken Nuggets

These baked chicken nuggets are super kid-friendly, and totally delicious! My girls both love them, and think they're just as yummy as the kind they get in their kids meals. I often make a big batch of them and keep some in the fridge or freezer for quick lunches. The girls like to dip them in ranch or just eat them plain. Geoff and I like to toss them in barbecue or buffalo sauce and eat them that way (yum!). Either way, they're delicious!

Ingredients
- 2 large chicken breasts, trimmed and cut into chunks
- 1 teaspoon olive oil
- salt and pepper
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup panko breadcrumbs
- 1 tablespoon parmesan cheese
- olive oil cooking spray
Preparation
Step 1
Preheat oven to 425. Line a 9 x 13 baking sheet with foil. Toss chicken with olive oil and sprinkle with salt and pepper. In a shallow dish or plate, mix together breadcrumbs, panko, and parmesan. Place the chicken pieces in the breadcrumb mixture, and toss to coat. Place in a single layer on the prepared baking sheet, and spray with cooking spray. Bake 15-20 minutes, or until cooked through. (If you want the nuggets to be more evenly browned, turn them halfway through cooking.)
