Ingredients
- 1 lb. almonds ground
- 1 lb. powdered sugar
- 4 egg whites
- 1 tbsp. vanilla
- 1/4 tsp. salt

Preparation
Step 1
Beat eggs to peaks. Add sugar, salt, vanilla. Beat 5 minutes. Gradually add powdered sugar, 1/4 teaspoon salt and 1 tablespoon vanilla. Using an electric mixer, beat for 5 minutes.Divide meringue in half (1 ¼ c). Add almonds to one portion. Roll ¼ inch thick on silpat. Trim ragged edges. Ice with meringue. Let that sit while preparing other sections. Cut into mini -domino sized cookies. Pick up with knife dipped in powdered sugar. Bake on parchment paper lines cookie sheets. Bake 325° for 8 minutes. (Took about 2 hours to do)
