PRAWN AND MANGO SALAD

Got this recipe from Susan Hadubiak..while she was sitting on her deck drinking wine... No idea where it came from !!

Ingredients

  • SALAD
  • 1/2 English Cucumber
  • 1 sliced avocado
  • 1 red pepper
  • 8 oz cherry tomatoes
  • 2 large mangos, peeled and sliced
  • 16 large shrimp, cooked
  • lettuce
  • DRESSING
  • 1 clove garlic
  • 1 tbsp chili sauce
  • 2 tbsp extra virgin olive oil
  • 4 tbsp lime juice
  • 3 tbsp chopped fresh mint
  • fresh ground black pepper

Preparation

Step 1

Clean and cut up veggies. Put over lettuce. Cook shrimp. Cool and marinate in dressing.

Make dressing. Pour over shrimp and vegetables just before serving.
