Holiday Lentil Pie

Ingredients

  • 1 1/4 cups lentil puree
  • 3 eggs, lightly beaten
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 cup dark corn syrup
  • 2 tbsp margarine, melted
  • 1 tsp vanilla
  • 1/2 tsp rum extract
  • 1 (9-inch) unbaked pie shell

Preparation

Step 1

Make lentil puree (mash cooked lentils). Preheat oven to 350 F. In a large bowl, stir together the egg, sugars, corn syrup, margarine, vanilla and rum extract until well blended. Stir in lentil mash.

Pour into pie crust. Bake until knife inserted halfway between center and edge comes out clean, about 60 to 75 minutes. Cool on rack.
